The grilled pork came out with that deep caramelized char you get when someone actually knows how to work a hot grill, edges crispy but still juicy inside. House pickled carrots and daikon gave the right bright crunch against the rich pate and sliced cha lua. Even after the drive home the baguette held its crisp structure. Really solid execution on a classic.
