I ordered the pho dac biet expecting the broth to have that deep, slow-simmered complexity you get when someone really works the spices and marrow. It was solid with nice slices of brisket and the right amount of cilantro and Thai basil, but nothing about it stuck with me once we left. The noodles were cooked fine and the balance was okay, yet it felt like a safe version rather than one that lingers in your memory.
